During anaerobic fermentation for 120 hours Sebastian introduces microorganisms fed by a yeast called LV, which is nourished with flowers from his farm—lavender, jasmine, mint, oregano—imparting floral notes and smoothness to the cup. The outcome is a coffee that blends the richness of their lands with the influence of the surrounding nature.
