What colors come to mind when you think of the word “Galaxy”? For Andres, it’s dark blue and bright yellow. “Easy enough. Those are the same colors that Andres associates with this honey process and the reasoning behind its stellar name.” To achieve the galactic notes of blackberry, cherry, chocolate, and lemon — and the visual of yellow — Andres picks the ripened cherries and depulps them immediately without using water. He then spreads the cherries onto raised drying beds for 1 to 3 weeks, constantly moving them to avoid the risk of fungus from the humidity in the mucilage. This is one of the trickiest parts of the honey process, and he has done it perfectly!
