The Process

How this coffee was produced

This is a washed process with a 72 hour fermentation after beign depulped
01. Harvesting

She harvests only the ripest coffee cherries by hand, then carefully sorts them through a flotation process using water to separate the high-quality fruit from any under- or overripe cherries.
02. Processing

The beans are then transferred to stainless steel tanks, for 72 hours. This After this process, she washes the beans
03. Drying Phase

She dries the cherries in open patios for eight days

About the producer

Carmen Montoya

Carmen Montoya has been a coffee farmer for 23 years. Since childhood, her parents instilled in her a love for coffee and the art of being a coffee farmer. She started with a small plot of an unknown variety in the region, putting all her effort into the processing of this coffee. Her dedication was recognized when she won the Cup of Excellence in 2014 with the coffee she affectionately named chiroso, a term adopted by her and fellow coffee...
