Arnulfo's Chiroso is a true family endeavor, with everyone contributing to the daily tasks of harvesting, processing, and drying the coffee. We fell in love with its exquisite flavor—creamy marshmallow with sweet notes of maple syrup and a bright mandarin acidity—making it a delightful coffee to enjoy. After fermenting in cherry for four days, the coffee is depulped and undergoes an additional eight-day fermentation. This extended process enhances the natural sweetness of the cherries. Thanks to the farm's high-altitude location, fermentation occurs slowly, allowing for a richer and more complex flavor development.

How this coffee was produced
This is a washed coffee that undergoes a double fermentation process—first in cherry and then after depulping, with added water

Coffee is hand-picked and sorted, where 95% are fully ripe
Processing and Fermentation
It is fermented in open tanks for 3 to 4 days, then depulped and undergoes an additional eight-day fermentation in stainless steel tanks with water to regulate the temperature.
Drying
It is dried in sun bed driers with shade for 2 to 3 weeks

Arnulfo Caro & Martha Cartagena
Arnulfo Caro, inspired by his brother, started growing coffee in 2020, harvesting his first crop in 2022, and has since been marketing specialty coffee with his wife, Martha, and their family. While Martha focuses on coffee processing and raising their young daughter, Arnulfo, a former miner, is fully dedicated to expanding the farm, guided by his mentor, Santiago’s father.
Hoyo Rico
At over 2,100 meters above sea level, Arnulfo and Martha transformed a piece of land into a thriving coffee farm. Located in Anzá, Antioquia, its high altitude is the key to producing such a delicious and distinctive coffee.
