Byron’s motivation to promote and gain recognition for his farm led him to develop this process. The double fermentation enhances the attributes of this coffee, which is why he named it “Baluarte,” meaning stronghold, as it strengthens the notes of pineapple, honey, and strawberries. Byron aims to convey strength through his coffee and invites us to learn more about it.

The Process

How this coffee was produced

It is a washed coffee with a double fermentation: 12 hours of fermentation in cherry, 160 hours after beign depulped

Harvesting and Stabilization

Coffee is hand-picked and sorted, where 95% are fully ripe and it is fermented in grain-pro bags immediately for 12 hours

Processing and Fermentation

Then depulped and fermented again for 160 hours in GrainPro bags with the coffee juice added

Drying

Dried in sun bed driers until it reaches 12% moisture
