The Process

How this coffee was produced

Natural with sugar cane added to the fermentation

Harvesting and Fermentation

Cherries are harvested and selected 95% ripe

Processing and Fermentation

A 96-hour fermentation process in closed tanks with water and sugar cane honey is added to achieve a 15% sweetness level

Drying

Dried in mechanical driers to ensure the right moisture content and shorten the fermentation process
