This Castillo and Colombia varieties lot, grown at 1600 masl, defies the common assumption in Specialty Coffee that one needs to grow an exotic variety at high altitudes to produce an excellent Cup. It's sweet like Sugar Cane, Floral, and Citrus.

The Process

How this coffee was produced

Its flavor notes com from an extended fermentation in cherry inside sealed tanks with an addition of coffee cherry juice from previous batches. This submerged anaerobic fermentation makes a balanced and homogeneous cup with an outstanding aftertaste.

Harvesting

Coffee cherries are hand-picked and selected 90% ripe, 5% semi ripe.

Processing

After selection, the cherries are depulped and fermented inside sealed tanks in addition with coffee cherry juice from previous batches.

Drying

Beans are dried in sun-bed driers for 2 to 3 weeks.
